In Riservo farm you will find one of the biggest dairy sheep situated in Tuscany. A herd of 1500 sheep, modern dairy production room and technological systems of production allow us to perfectly manage our animals. Riservo is the perfect example of what happens when tradition and innovation are harmoniously combined.

The production chain
High-quality forages and grains are the base of our sheep diet and this support a good milk production. We cultivate only selected forages and we carefully follow the whole production process in order to guarantee the highest quality cheese for the consumer.
THE CHEESE FACTORY
Our technological system of production is designed to better preserve the organoleptic properties of the milk and to enhance its incredible quality. A system that, every year, allow us to turn 4000 quintals of milk into delicious cheeses.
In order to improve the quality, we equipped our farm with refrigerating rooms and industrial systems to age our pecorino cheese and let it dry on stainless steel racks.
